A Seriously Cheesy Guide

This is a guide explaining what types of cheeses combine well with different types of foods.

Put down the American cheese and pick up some...Edam? Fontina? Havardi?

By the way, I think when the article states "aromatic", it really means stinky!

Had a few odd dishes in Switzerland

I remember dipping bread in some pink, goopy looking stuff that looks like bologna before it's cooked. Actually, it consisted mostly of veal. Not really common to eat it that way; it's just that my girlfriend and her brother developed a taste for it. It was tasty enough. I ran across that photo last week while I was reading about the little buggers. I may do a xombyte about the humble cheese mite... or about the strange things people in some German-speaking parts of the world eat.

I love cheese

Not too many of the real smelly ones, though. Feta is one my favorites of the more aromatic cheeses. My dad was a big fan of Limburger when I was growing up, which I thought stunk worse than a cat's litter box. :(

 
 

Only a very select few cheeses,

I have to point out! They have German names, and you would definitely smell them before you got them anywhere close to your mouth.

Stinky cheese

Was just reading the other day about cheese mites (which as you might guess are mites that feed on cheese, among other things). When feeding on cheese they leave a coating of dust on the cheese made up of their feces and dead mites. This gives the cheese a distinctive aroma and flavor, and this type of cheese is treasured in some parts of Europe. Though not by everybody, I'm sure.
