Anti Cancer Super-food recipe: Aloo Matar Gobi curry
posted November 15, 2008 - 12:48pmFollowing recipe is not only flavorful, contain zero cholesterol (if you cook with vegetable oil), its packed with anti-cancer super-foods.
Recently a friend was diagnosed with cancer and was wondering what foods to eat. After doing some research, I realized my favorite curry was, itself a big pot of super-food.
Tips
1. play around with the spices to get the combination you like.
2. If it’s a little bitter at the end, add half a tea spoon of sugar.
3. Vegetable stock. You could make this ahead using the onion skins, cauliflower leaves and any other vegetable scraps - e.g. peel the potatoes ahead of cooking and keep them in water, scrub the skins clean and add to the stock.
With a lot of vegetables the best of the nutrients are in or just under the skin so don't let them go to waste.
Aloo Matar Gobi curry = Potatoes, Peas, cauliflower,
This is somewhat of a merge of Aloo Matar and Aloo Gobi.
2 medium onions (I prefer yellow onions in this recipe)
2 tbsp ghee / butter / vegetable oil
3 medium potatoes
1/4 cup of pees
1 small cauliflower
Half a thumb of ginger, grated
3 garlic cloves - diced
2 tsp of cumin
3 tsp of turmeric
3 (or more) tsp of curry powder
1/4 cup white wine - optional
Water to cover or vegetable stock
Coriander - small handful
Chili - how ever many you want (or don't want)
The traditional recipe does not include wine!
Sauté onion in oil, med to low heat, until very soft and beginning to brown
Add cumin turmeric chili - cook for a few mins
Add Garlic and ginger (grated) - cook for a few mins more
Add curry powder - cook again for a few minutes
- note add curry powder to taste. I use a lot, the above recipe is moderated.
Add the potatoes - (pealed and chopped into about 1 inch chunks) and stir around
Add the wine and let it reduce until nearly gone
Cover with water (or the vegetable stock) and let it simmer slowly.
Once the potatoes are about 2/3 done, add the cauliflower, and more water if required.
Once it’s nearly cooked - turn up the heat a bit and let the liquid reduce for a few minutes
Add peas just to warm through
Sprinkle with coriander leaves.
Serve
This above recipe can easily be a good size side dish for 6 people or more.
Good served with rice and a main disk.
Nutritional bonuses:
cauliflower: Contains glucosinolates and sulfurophane (anti-carcinogens)
Onions: quercetin - a flavonoid, antioxidant - anti-carcinogen amongst other things, believed to be particularly beneficial in fighting pancreatic cancer
Garlic: all all-round super food and anti-carcinogen
Turmeric: Also believed beneficial for treatment of pancreatic cancer, melanoma and breast cancer
Cumin: good for stomachs issues, and so is ginger.
Chile: contains Capsaicin which is good for prostrate cancer, and may reduce growth of various cancers.
