Bacon-roasted Brussel Sprouts

Bacon-roasted Brussel Sprouts

Ingredients:
2 packages frozen brussel sprouts
1/2 package bacon, chopped into 1/2" pieces
1/2 of a medium sized red onion, chopped
2 tablespoons of olive oil
Salt, pepper, and garlic powder to taste

In a large bowl, gently toss all of the above ingredients. Pour into a large casserole dish. Bake at 350 degrees for 30 minutes, uncovered. Then, broil for about 10 minutes, or until bacon begins to brown. Watch carefully while broiling to avoid burning.

Note: I use frozen brussel sprouts, bacon, and red onion. I slice red onion and cut packages of bacon in half before freezing. This makes the red onion always available with no waste, and the bacon is much easier to cut when frozen than raw.
