BANANA TEA BREAD (Diabetic)

1 3/4 c. sifted all-purpose flour
2 tsp. baking powder
1/4 tsp. baking soda
1/2 tsp. salt
1/4 c. melted butter or margarine, cooled
2 eggs, well beaten
1 c. Sugar Twin
1 tsp. vanilla
2 medium bananas, mashed

Grease and flour a 9 x 5 x 2-inch pan. Preheat oven to 350 degrees. Sift flour, baking powder, baking soda, and salt together. Mix together butter, eggs, Sugar Twin and vanilla. Add to flour mixture, stirring only until flour is moistened. Carefully stir in mashed bananas. Spoon into prepared pan. Bake for 55 minutes or until done. Makes one loaf.
