BUDDA HAND RECIPE CANDY

1 cup fine sugar
30-60 sec. in blender
1 lrg. BUDDA HAND
6-7 lemons
4-5 oranges cut into strips
2 cups white sugar
1-2 cups of extra fine sugar for dusting
1. Place citrus strips in to sauce
pan and cover with water.
Bring to a boil and then simmer for 10 minutes. Drain,
rinse peels, repeat process 2 or more times to tender- rize peels and remove bitterness.
2. Make simple syrup over mediam heat, with 2 cups water be sure to stir syrup until sugar dissolves completely.
3. When syrup boils, add boiled peels and adjust heat to maintain a moderate boil. Stir occassionally until 230 F, about 1 to 2 hours.
4. Line cookie sheet with foil spread half of extra fine sugar in thin layer.
5. Syrup reaches 230 F, remove peels place onto cookie sheet sprinkle more sugar on top of peels.
6. Dry over night.
7. Now you have organtic BUDDA HAND candie
