8 cups yoghurt,1 cucumber, peeled and chopped into fine strips,
1 bunch radish,chopped horizontally in circles
1 small piece of beetroot, chopped
2 peaches, cut in cubes,
A small bunch fresh mint
2 onions, finely chopped
1 red chili, finely chopped
1 green
chili, finely chopped
1 clove garlic, crushed
A pinch of cumin powder
1 tsp almond powder
1 tsp yellow mustard seeds
1 tsp black mustard seeds
120 ml olive oil
1 tsp salt
Method:
Divide yoghurt into three bowls. In the first, mix cucumber, mint onions, some chili and salt. In the second, mix radish,beetroot,garlic,cumin ,some green chili and salt.
In the third:peaches,almond powder and a few mint leaves.
Keep in the refrigerator. Divide into 12 glasses before serving. Toast black and yellow mustard seeds, and include in raita. Add a few drops olive oil.
