I usually make this for my family when I'm not prepared for dinner and need something that is quick and easy to cook. I do have a couple of picky kids but they love this so if you have picky eaters this is also a great meal to prepare for them.
I usually spend around $10.00 or less depending on the brands you buy.
Ingredients:
2 cans of chili
1 can of black olives (Optional)
2 cans of stew tomatoes
2 small boxes of Corn bread
shredded mozzarella
shredded American cheese
Instructions
Warm the oven to 350 or whatever the corn bread ask for. Take a large mixing bowl and mix in chili, black olives and stew tomatoes. With a casserole dish or pan grease the bottom with oil then add your corn bread mix. Follow the directions on the back of the box, you are going to double the ingredients it says, due to having two boxes made. Spread it evenly with the pan and add the remaining ingredients. Top it off with the cheese and cover. Leave it in the oven for about 25 min or whatever the corn bread box says. For the last 5 minutes uncover and leave it in for the additional 5 minutes.
For additions you can top it off with sour cream and salsa.
(Note: This is used with small boxes of corn bread, if your using a big box just use one and don't double the ingredients.)
If you want to turn it into a vegetarian dish: Make sure the corn bread you buy just asks for water instead of egg and milk. Buy vegetable bean chili and skip the cheese and sour cream.
