Corned Beef and Cabbage - Recipe and History

Corned beef and cabbage is seen and the classic Irish dish, and it's served in homes and restaurants all over the United States around the time of St. Patrick's Day. An article at the Web page Irish Culture and Customs gives recipes for corned beef and cabbage, along with a bit of history about this meal.

This page also has other Irish beef recipes, including beef braised in Guinness, spiced beef, and beef and mushroom pie, as well as a horseradish sauce to go with the corned beef and cabbage.

As it turns out, corned beef and cabbage is not really eaten at holiday time in Ireland; it's seen as too simple a dish. The article says that in Ireland the dish is served in restaurants mainly to satisfy the tourists. Americans sure love the dish, and there's plenty of it served in the U.S. each St. Patrick's Day.
