The definitive cheese scone recipe.

The definitive cheese scone recipe.

My favorite comfort food. Based on my mothers recipe.

"Dry Ingredients’:
1.75 cups of all purpose flour (plain flour)
3 teaspoons double acting backing powder
3-4 ounces of the strongest sharpest cheddar you can find (grated) and a little more (not grated)
Large pinch of salt
Good grinding of fresh black pepper

“Wet Ingredients”:
Third of a cup of milk.
2 eggs
1 tea spoon of Dijon mustard

Method:
1. Mix the dry ingredients in one bowl (with the exception of the non-grated cheddar)
2. Mix the wet ingredients in another bowl.
3. Then add the wet to the dry
4. Incorporate everything so that it comes together in a single clump - don't over work it.
5. Form into scones – what ever shape you like.
6. Thinly slice the remaining cheddar adding a thin slice to the top of each scone.
7. Cook in the middle of a pre-heated oven at 425 Fahrenheit for around 12-15 minutes, the cheese will bubble and be just starting to brown.

Serve still warm with butter or margarine, cut in half and butter each half, they are at their best when they are still warm enough to melt the butter; yummmmmm.
