E-Coli Free Spinach Squares

E-Coli Free Spinach Squares

Popeye says that we all need to eat our spinach and these yummy squares are guaranteed to be free of the deadly E-Coli bacteria!! They make great snacks for the kids because they are so cheesy that they don't even notice that they're made of spinach. We like them hot or cold!

Ingredients:

4 TBSP butter
3 eggs
1 cp milk
1/2 tsp salt
1 1/2 tsp baking powder
1/4 cp chopped onion
1 pound Monterey Jack cheese, grated
2 bags frozen chopped spinach, thawed and drained

Prehat oven to 350*

Melt butter in a 9"x17" baking pan in oven as it's heating.

Beat eggs well and add milk, flour, salt, and baking powder.

Mix well and stir in spinach, cheese, and onions.

Spoon into buttered baking pan.

Bake 35 minutes or until toothpick comes out almost clean.

Remove from oven and let stand 5 minutes before cutting into bite-sized sqaures.
