If you've ever tried to make cheese sauce in a double boiler using 'real' cheese you probably just wanted to throw it at the wall.  I know I did, and I worked with food for years.  This is a quick and easy cheese sauce recipe that does not require a double boiler and does not break easily.   It's perfect on broccoli or as a base for soup.
