Easy Taco Bake Casserole Recipe - Tastes Great and Saves Money - Cheap Dinner Idea

Sauce:
2 lbs ground beef
I prefer lean, not extra lean. Brown the hamburger well, drain if there is a lot of grease.

Add:
1 large yellow onion, chopped fairly fine

2 packages dry taco seasoning mix

2 cans stewed tomatoes (chopped or diced well)
Use the liquid too.

2 cans tomato sauce

1 can corn
Creamed corn works well, or whole kernel corn, or even frozen corn

1 tsp garlic powder

1 tsp salt

1 tsp pepper

Cook together for a few minutes. Should look like a spaghetti sauce.

1 large bag of regular (non flavored) tortilla chips or broken taco shells
Any brand. Cheap ones work fine.

Break the chips a little bit (don’t mush) and place into a large pan (big enough to hold all of this).
Add the sauce to the chips and stir to distribute evenly. Should be a little on the wet side, but not soupy.
You don’t want it to be dry. If it is dry add more tomato sauce and maybe a bit more taco seasoning mix.

Top with a good helping of medium cheddar cheese, or even better, use Monterey jack cheese combined with cheddar cheese.

Top with chopped black olives and chopped green onion.

Bake until bubbly, hot, and cheese is well melted. 350 to 400 degrees.

Serve with a small side of sour cream if desired. Also guacamole on the side is extra special and really good. A side of hot salsa or jalapeño’s is nice too. I serve it with a shredded lettuce and chopped tomato salad on the plate. Then I put the serving of the Taco Bake onto the salad and serve the salsa, sour cream, and guacamole on the side too.
