I remember in elementary school that the teacher would often bring in posters that, depending on how you looked at them, the picture would appear as anything from a collection of shapes and squiggly lines to a fairietale castle. The Barrow Neurological Institute in Arizona has performed a study on optical illusions, using the 1981 painting, Enigma, by Isia Leviant.
