We want to eat better, but we are lazy. Sad, but true. So, when the government comes out with what seems to be a magic bullet and proclaims that simply switching to soy substitutes will make us healthier and happier, we jump on the soy bandwagon. Unfortunately, many Americans are finding out that a little research to verify the plethora of claims goes a long way.

There are many foods that are made from soy that have been used for centuries, such as tempeh and miso, which are very good for you. Then, again, there are dozens of chemically-created soy milk, ice creams, burgers, and other foods that are a poor substitute for their animal-protein cousins.
