Fast And Easy Black Friday No Cook Omelet Brunch For A Crowd
posted November 20, 2007 - 2:57pmYou wake up early Friday morning, Black Friday, and you want to go shop till you drop. But..... you have a house full of guests who will all be getting up hungry. I know its hard to believe after yesterday's feast, but you know it is true. They will start wandering out wanting breakfast/brunch any time now.
You could be stuck here for hours feeding this crowd.
Not this Black Friday. You have shopping to do.
So get out some of those leftovers and set up a quick omelet bar.
You will need:
2 bowls that will nest with ice in the larger bowl
3 eggs per person
2 tablespoons of water per person
leftovers from your feast
2 slices of buttered toast, 2 tortillas, or 1 muffin per person
an electric skillet or kitchen kettle full of water
little bowls to hold the chopped leftovers
a ladle
1 quart freezer zip top bag per guest and one for yourself
leftover pie for dessert
Now, put ice in the larger bowl and beat 3 eggs with a little water for each guest in the smaller bowl. Season with salt and pepper and cover with plastic wrap. Place the smaller bowl on the ice in the larger bowl, with the ladle beside it.
Now lets look at your left overs. These will be your omelet fillings, so you want to cut them into bite sized pieces.
Here are some suggestions.
bite sized bits of ham
green bean casserole
candied yams cut into bite size pieces
turkey bites, of course
raw or cooked mushrooms
black olives from the relish tray
green olives from the relish tray
cubes of different cheeses or some grated cheese
any leftover cooked veggies, cut up asparagus is great
cooked corn, cut from the cob
cranberry relish
well, you get the idea.
Fill the electric skillet or kitchen kettle half full of water and bring to a simmer.
Now, each guest gets a quart freezer zip top bag.
Ito that bag they place the items they would like in their omelet.
Then they ladle beaten eggs into the bag, squeeze out most of the air and zip it up. Leave a little air in the bag so the top of it will stay on top of the water. Drop the bag into the pot of simmering water ad let it cook for about five minutes. The bag will float and the omelet will cook perfectly.
When the omelet has cooked and the eggs have set, carefully fish the bag out of the water and open the bag and let the omelet slip out onto a plate. You will get a perfect omelet every time. As an added bonus, there is no added fat. You can also use an egg substitute instead of the eggs if you want.
Serve with buttered toast, tortillas, muffins or any other bread item that is handy.
A little leftover pie for dessert and you have a lovely and quick brunch for your guests. Write a little note with instructions.
Now, time to shop...
