Father's Day Memories - Dad's Mock (but good) Fried Rice Recipe

Father’s Day Memories - Certain things remind me of my Dad. This recipe is one of those things. We had a large family and very little money and Dad made this recipe up. All of us kids would clamor to the kitchen when Dad made this. We loved it...and him!

Dads Mock (but good) Fried Rice

4 – 6 slices of bacon – chopped fine and fried very crisp (take 2 tsp of the fat and place into another skillet for frying the eggs later)

1/3 of a green bell pepper, finely diced – sauté in the bacon/fat

2 cans sliced mushrooms, drained – add to the pan with bacon/bell pepper and sauté for a few minutes

3 cups COOKED white rice – add to above in the skillet

2 - 4 TBSP Soy Sauce –amount depends on how much Soy you like. It is salty so start with the smaller amount first.

In the separate skillet with the reserved bacon fat – scrambled 4-6 eggs.

Add the scrambled eggs to the rice mixture in skillet. Allow this to cook for about 10-20 minutes over low heat stirring frequently.

Add 3-4 finely chopped green onions, white and green part at the last minute.

Taste for seasoning. Add more soy if needed at this point.
