Healthy BBQ chicken in the oven, FAST and EASY!!
posted August 25, 2009 - 10:55amTHIS is one of my husbands FAVORITE dishes. I love it too because its easy, fast, cheap and delicious! We have a new baby so I don’t have much time for prep and I hate just standing around in the kitchen watching everything cook.
PREP TIME -10 mins
COOK TIME 30-35 mins
SERVES 4
*TIP* Whenever I go shopping I buy at least 1 white onion and 1 green bell pepper. As soon as I get home I chop them both and freeze them in a large ziplock. This saves prep time every time I cook! Sometimes I add mushrooms and yellow or red bell peppers too!! Its all delicious!!
1. Thaw 4 boneless skinless chicken breasts
2. Preheat oven to 350°
3. Line a glass 13x9 pan with the onion/bell pepper mixture from your freezer *
4. Rinse each chicken breast with cold water and place neatly on top of the onion/bell pepper mixture
5. Glob your favorite BBQ sauce onto each piece of chicken and spread it into a thin layer. My favorite is “Sweet Baby Ray’s”
6. Sprinkle with “morans” grillin’ salt and fresh pepper
7. Place on middle rack in oven for 30-35 minutes (depending on thickness of breasts) I always set a timer and go tend to more important things like relaxing with my family after a long day.
I like to serve this dish with white rice and frozen mixed veggies. My husband and I are on a diet, we both put on excess “baby weight” and this is a delicious, healthy, inexpensive meal! If you shop at Costco for the chicken breasts this meals TOTAL price is around $5!!!!!
