Healthy Eating: Cool,cool cucumbers

An afternoon tea with cucumber sandwiches between wafer thin brown buttered bread, provides a delight of contrasts- the soft bread, the smooth butter and the cool, crisp cucumber. Whether you peel a cucumber or not is a matter of personal preference, but wash it if you don't intend to peel it.

TO SERVE....

a)Thinly slice cucumber and serve it with a light dressing or sour cream
b)Cut into thick chunks and serve with tomatoes, peppers and feta cheese and dress it with olive oil and a little white vinegar

WHILE BUYING REMEMBER..

a)Cucumbers should be firm from top to bottom
b)They are often sold pre-wrapped in plastic and can be stored in the salad drawer of the fridge for upto a week.
Discard a cucumber immediately if it feels soogy.

WHY CUCUMBERS ARE GOOD?

Cucumbers are a good source of Vitamin C and Vitamin A. They also contain calcium and potassium. The green colour indicates they are a great source of chlorophyll which is a valuable phytonutrient.
