Hobo Stew Recipe - Easy and Inexpensive
Hobo Stew
2 quarts water (or equivalent in beef stock)
1 lb hamburger
3-4 beef bullion cubes
1 small head cabbage, chopped
1 can chopped stewed tomatoes including the liquid
1 finely diced onion
Any assortment of vegetables that you have on hand. This soup is a great way to use up those leftover bits and pieces of vegetables you have in the fridge. Our favorite to add is potatoes, carrots, celery, yellow or zucchini squash, and corn.
Salt and pepper to taste (bullion can be salty so taste soup before you salt)
1 tsp of dried sweet basil (this adds a great touch to it and really is needed)
1 tsp of dried parsley (optional)
Add all ingredients to a pan large enough to hold it and cook until done. Hamburger can be added raw and broken up into small chunks or it can be browned first and then added. Softer vegetables add towards the end so they don’t get too mushy.

Yes ..that is how I usually cook it is in my crockpot. I put everything into the crockpot before bed and by morning it is awesome soup. Serve with some type of bread and dinner is ready.
