How to Celebrate Hanukkah with Potato Latkes
posted October 31, 2009 - 9:09pmAt sundown on December 11th Jews around the world will celebrate Hanukkah, the Festival of Lights. Parents often give their children presents, one for each of the eight days, but the holiday is more than a gift exchange.
This Jewish holiday honors the small band of people called
the Maccabees who, although outnumbered by Seleucid Greeks, led a successful revolt. The first thing these brave Jews did was to rededicate their temple and restore the sacred lamp called the menorah. There was only enough oil to burn for one day. Miraculously, the olive oil supply lasted 8 full days. It took 8 days to prepare more oil for the lamp.
Today Jews celebrate by lighting candles on a menorah each evening, adding another each night and preparing symbolic festive foods. The customary food eaten during this festive event is the potato pancake or latkes, which is fried in oil.
You can altered the recipe somewhat by adding sweet potato or zucchini on occasion.
