How to make boiled pineapple fruit cake

Boiled fruitcake is delicious and easy to make. The flavour of the cake also intensifies when it is left for a day.

You will need:
450g crushed pineapple.
100g Demerara sugar
125g butter
375g dried mixed fruit
½ teaspoon allspice
1 teaspoon cinnamon
150g self raising flour
175g plain wholemeal flour
75g sunflower kernels
3 eggs
A pinch of salt
1 teaspoon bicarbonate of soda

Step 1: Preheat the oven to 150 degrees, put the butter, dried fruit, sugar, pineapple, bicarbonate of soda, cinnamon and allspice into a saucepan on medium eat. Stir until the sugar has dissolved and the butter has melted.

Step 2: Bring to the boil and then simmer for 10 minutes. Take the pan from the heat and allow to cool.

Step 3: Grease two cake tins and line with three layers of greaseproof paper.

Step 4: Sift the plain and self-raising flours together and sift the salt in.

Step 6: Stir the sifted flours and salt into the mixture and beat the eggs. Add the beaten eggs to the mixture and add the sunflower kernels. Stir thoroughly.

Step 7: Spoon the mixture into the tins and bake for 1 ½ hours. To check if it has cooked, put a thin knife or skewer into the centre, if it comes out clean, it is cooked. If not, leave it in for a little longer
