How to Make Mojo Potatos Just Like at Shakey's

I made Mojo potatos for my friends the other night. I used to love going to Shakey's in the 80's and ordering these with a pizza. They're awesome, enjoy!

The best way to cook these is in a deep fryer or a frydaddy. You can also cook them in a skillet. To cook in a skillet heat up 2 cups of vegetable oil to 350 degrees.

Leave the skin on the potatos, Slice your poatoes into slices about 1/4 inch thick.

Prepare the flour mixture. Mix 1 cup of flour, salt, pepper, cayenne pepper, paprika, and thyme.

Wash potato slices in water. Roll the slices in the flour mixture, flouring evenly. Shake off any extra. Place the slices in the hot oil. Cook on each side about a minute and a half or until golden brown.

Dry on a plate with paper towels for a few minutes. I like to serve with a thick ranch dressing. Enjoy!

  • 3 unbruised potatos
  • 2 cups vegetable oil
  • 2 cups flour
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon cayenne pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1/2 cup thick Ranch dressing
