how to stretch a roast
posted September 6, 2006 - 3:49pmDay 1 - Serve THIN slices of beef with potatoes and a vegetable combo. Serve a tempting dessert, as they may opt to skip seconds on the meat to have room for dessert.
Day 2 - Make a Chinese Style Lo Mein using thin slices of beef and leftover vegetables. See My other Posts for this Recipe.
Day 3 - Cube the beef and make a huge pot of Vegetable Beef Soup.
Day 4 - Make a Pot of Beef Goulash with Onions, Carrots, Cabbage, and Potatoes. Simmer in beef Broth until tender. Serve with crusty rolls.
Remember, any leftover meat or Lo Mein and many containers of Soup can be frozen and eaten on those days no one feels like cooking. I usually prepare all of these the same day and freeze the extras. As a rule I cook twice a week and heat up frozen or stored meals on the other days.
