Hudson Valley Pudding and Pie Recipes

4 eggs, 4 cups milk, 1/3 cup sugar, teaspoon salt.
Combine eggs, salt and sugar. Scald milk. Add scalded milk to the above ingredients, adding slowly, stirring constantly. Add vanilla or lemon flavoring and about 1/4 teaspoon nutmeg. Pour into custard cups or casserole dish. Place containers in large pan of hot water, having pan half full of water so it won't boil over. Bake in 350 degree or 375 degree oven for about 40 minutes or until a knife inserted in center comes out clean.
This is a typical Sandyfields recipe as it uses easy to find ingredients and is simple to make. Simplicity is a common theme.
IMPOSSIBLE PIE
2 cup flour, 1 cup sugar, 1 cup coconut, 1 stick margarine, 2 1/2 cups milk, 4 eggs, 1 1/2 teaspoon vanilla.
Mix all ingredients in blender. Pour into buttered pan. Bake at 400 degrees for 15 minutes, then at 350 degrees for 30 minutes. Cool and Serve.
OLD FASHIONED CREAMY RICE PUDDING
1 quart milk, 1/4 teaspoon salt, 1/2 cup rice, rinsed and drained.
Simmer for 15 minutes, 1/2 cup of raisins, simmered for 5 minutes, 1 cup evaporated milk (undiluted), 2 eggs slightly beaten, 1/2 cup of sugar, 1 teaspoon vanilla.
Cook for 3 minutes. Sprinkle on nutmeg and/or cinnamon. In a heavy saucepan cook the milk and salt until slightly heated. Stir in the rice. When mixture reaches the boiling point, lower the heat and simmer for 15 minutes. Stir occasionally. Add raisins and cook until rice is done, which is about 5 minutes. Add 1/4 cup of the evaporated milk and cook for a few minutes longer. In a mixing bowl combine eggs, sugar, vanilla and remaining 3/4 cup of evaporated milk. Stir some of the rice mixture into egg mixture. Return this mixture to the one in the saucepan and cook slowly until it thickens a bit. Pour into bowl. Stir pudding often as it cools. Sprinkle with nutmeg or cinnamon or both. This dish serves 4 people.
BROWNIES
Melt together over hot water - 2 squares of unsweetened chocolate 20 oz.), 1/3 cup shortening. Beat in 1 cup sugar, 2 eggs. Sift together and stir in - 3/4 cup sifted flour, 1/2 teaspoon baking powder, 1/2 teaspoon salt. Mix in 1/2 cup broken nuts.
Spread in well greased 8 inch square pan (8x8x2). Bake until top has dull crust. A slight imprint will be left when top is touched lightly with finger. Cool slightly then cut into squares. I use a double boiler to melt the chocolates and mix the brownies on top of double boiler.
WASHBOARD COOKIES
Mix 1 cup of shortening (or 1-2 cup of margarine), 2 cups of brown sugar, 2 eggs, 1/4 cup of water and 1 teaspoon of vanilla. Sift together and add 4 cups of sifted flour, 1 1/2 teaspoons of baking powder, 1/2 teaspoon of baking soda and 1/2 teaspoon of salt. Add 1 cup of shredded moist coconut. Chill dough 2 hours. Roll into balls the size of walnuts. Place 2 inches apart on a baking sheet. Flatten and press into ridges (washboard) with floured fork. Bake at 400 degrees for 8 to 10 minutes.
PRUNE PUDDING
One large cup of stewed prunes-water removed, and very soft. Add the whites of 2 eggs, well beaten. Sweeten to taste. That is, about 1/2 cup of sugar. Take most 2 cups of milk and make a custard with the yolks and 1 tablespoon of flour. Add 1 cup of sugar or what you need. Pour custard over prunes. Then with a fork raise the prunes up so custard can go in the prunes. This is delicious and comes from a family recipe which goes back for many years.
RHUBARB PIE
4 tbsp. Flour, 1 cup of sugar.
Prepare 4 cups of rhubarb (do not peel), cut into 2" pieces, and place into a piecrust lined pan (unbaked crust); sprinkle with flour and sugar. Add 3 eggs, beaten and 3 tablespoons of water. Mix together and pour over rhubarb. Dot generously with butter. Bake. No top crust is needed. Bake at 450 degrees for 10 minutes and 375 degrees for another 40 minutes.
This custard like-pie is delicious, especially when fresh country rhubarb is used.
BREAD PUDDING
2-4 cups of dried bread, 4-8 cups of milk, 1/4-1 cup of sugar, 3-6 eggs, beaten, 2-4 tbsp. of butter, 1/2-l teaspoon of salt, 1-2 teaspoons of vanilla. Optional 1/2 cup of peaches or 1 cup of raisins. Cover bread with milk for 5 minutes. Add rest of ingredients. Mix well and pour into large buttered baking dish and set in pan of hot water. Bake for 1 hour at 325 degrees or until knife blade comes out clean.
SPICY PUMPKIN PIE
1/8 tsp. Salt, 2/3 cup of sugar, 3 eggs, 1/4 tsp. of cayenne pepper, 1 2/3 cups of milk, 1 1/2 cups of mashed cooked pumpkin, 1/2 recipe plain pastr.
Sift dry ingredients together and stir into eggs. Add milk and pumpkin. Line pie pan with pastry and pour in filling. Bake at 400 for 10 minutes. Reduce temperature to a slow 325 degrees and bake for 35 minutes long or until knife inserted in center comes out clean. Cool-will make 1 pie.
A variation of this is to add 1 tsp. of cinnamon, l/4 tsp. of nutmeg, or l/2 tsp. of ginger.
