Husband's BBQ Pork Burritos Recipe - Fast - Cheap - Easy Dinner Idea
posted March 31, 2008 - 12:37amFlour Tortilla Shells 1 or 2 per person
BBQ Pork with the sauce - 1/3 - 1/2 cup per burrito (leftover bbq pork works great, shred or chop or slice thin, if dry add a little more bbq sauce)
1 heaping TBSP refried beans per burrito
1/4 - 1/3 cup grated smoked gouda cheese
1 - 2 heaping TBSP sour cream
shredded lettuce
sliced black olives
Microwave or steam burrito shell for a few seconds until warmed. Assemble burrito with heated beans spread on tortilla shell. Top with the prepared and heated BBQ pork and any additional BBQ sauce. Top with smoked gouda cheese, shredded iceburg lettuce, black olives and the sour cream. Fold in the normal way you fold a burrito.
Or you can assemble and microwave for a minute. Do not microwave too long as it causes the tortilla to become brittle.
These have an excellent flavor profile. No salsa needed as these arent Mexican in flavor.
