Indian Recipes- Kerala Onam special Vegetable Recipes
Onam the National Festival of the state of Kerala is fast approaching . Onam is the time to enjoy the traditional Vegeterian dishes of Kerala . There is no match to these dishes since from time immemorial Keralaites are known for their skill in cooking as wellas in hosting feasts for friends and relatives during festive occasions. Here I give below a few popular and delicious fat free onam dishes from the traditional Kerala Kitchen. Enjoy the Unique kerala Onam special recipes.
I-Kerala Koottu curry(Mixed Curry)
1. Tender banana cut into pieces - 1 cup
2. Elephant yam cut into pieces - 1 cup
3. Gram - ½ cup
4. Scraped coconut - 1 cup
Cumin seed - 1 pinch
Garlic - 1
5. Turmeric powder - 1 Tea spoon
Chilly powder - 2 Tea spoon
Salt - as needed
6. Scraped coconut - 2 Table spoon
Onion - 2
Dry chilly - 4
Coconut oil - 2 tea spoon
Curry leaves - as needed
Soak the gram for 10 hrs and cook separately. Cook the banana and elephant yam with the 5th items and 1 ½ cup water. Grind the 4th items well, mix this paste and the cooked gram to the cooked vegetables. Allow the mix to boil. Heat the oil and roast the 6th items till it becomes light brown in colour and add to the curry.
Koottu Curry is a must for all Kerala traditional marriages and festivals.It is very delicious.
II.Olan
1. Ash-guard - 150g
2. Pumpkin - 100g
3. Gram - ¼ cup
4. Green Chilly - 5
5. Coconut oil - 1 Tea spoon
6. Coconut milk - 1 cup
7. Salt, Curry leaves - as needed
Soak the gram for 10 hrs and cook separately. Cut the vegetables into 2" square pieces and cook with Green chilly, Curry leaves, salt and some water. Add the gram into it. Low the flame and add coconut milk and coconut oil into the curry. Olan is ready to serve.
The speciality of Olan is it is free of spices and chillies. Contains only Salt and coconut milk.
III. Kerala Ginger Curry
1. Ginger - 75g
2. Onion - 10
3. Green Chilly - 3
4. Tamarind - as the size of a small lemon
5. Chilly powder - 1 tea spoon
6. Coriander powder - 1 Tea spoon
7. Turmeric powder - ½ Tea spoon
8. Salt, Jaggery - as needed
9. Ghee - 1 Table spoon
10. Coconut oil - 1 Tea spoon
11. Asafoetida
Cut the ginger into thin round pieces. Heat the ghee and fry the ginger till it becomes brown in colour. Remove it to a plate. Pour coconut oil into the same pan and roast onion and green chilly. Crush the fried ginger and add to this. Add chilly powder, coriander powder, turmeric powder and salt. Soak the tamarind in 1 cup of water and extract the juice. Add this juice to the prepared mix. Dissolve jaggery in water and add to the mix . Allow the mix to boil.On boiling for a few minutes Put off the flame and alow to get the curry cooled. Serve the ginger curry cold.This is like pickles and can be stored for a month.
