Eggs ala Goldenrod Breakfast
Inexpensive and Impressive Breakfast Meal

When describing this recipe to someone they may think it is odd. This is a delicious meal. It has great memories for me as my father used to make it every Easter morning with the Easter Eggs we had gone hunting for. I make it several times a year and the flavor is great.

To have on hand and already prepared:

8 slices toasted bread – buttered. We like to use cheap white bread and buttered heavily.
8 hard boiled eggs- peeled- and finely chopped. Here is what makes it special: Set aside the boiled yolks of the eggs before you chop the whites. The chopped whites will be added to the white sauce. The yolks will be used later.

Make a basic White Sauce (béchamel): Use your own white sauce recipe or the one below:

3 tablespoons butter
3 tablespoons flour
1/2 teaspoon salt
2 1/2 cup milk or 1 ½ cup evaporated milk and 1 cup water (the canned evaporated milk / water mixture is the absolute best for making gravies. It gives it an excellent flavor)

Melt butter in a sauce pan and whisk in flour and salt until smooth. Cook the flour/butter mixture over low heat for 2 – 3 minutes to help reduce the flour flavor. Gradually (slowly) stir in cold milk, stirring constantly and cooking over direct heat (again- stirring constantly) until sauce boils; reduce heat slightly and continue to stir until sauce becomes smooth and thick. When sauce thickens, simmer for an additional 5 minutes over very low heat, stirring occasionally.

Stir carefully to avoid lumps. If sauce becomes lumpy, use a stick blender or rotary beater to blend out lumps or else press through a sieve. White sauce is not that hard to master. Just watch it and stir as it cooks.

Add the chopped egg whites to the white sauce. Add salt and pepper to taste. A little extra black pepper is nice.

Place the buttered toast on a plate (2 pieces per person). Evenly distribute the white sauce/egg white mixture on top of the toast. Now crumble the boiled egg yolks and sprinkle on each serving in a nice pattern.

Serve with a piece of fruit or a fruit cup and coffee (or juice) and you have a special breakfast for very little money.
