Jerk It Up Chicken
Jerk seasoning is a spicy blend of garlic, onions, chiles and other spices
originating from the Caribbean. Try this one out on the barbecue when
it's too hot to stay inside.

Cooking time: 30 mins
3-1/2 pounds fresh chicken legs
2 tablespoons olive oil
2 tablespoons jerk seasoning
2 limes, juiced
Preheat oven to 400°
Brush chicken with oil and sprinkle with Jerk Seasoning. Place in a
shallow roasting pan and bake 30 minutes or until cooked thoroughly.
Sprinkle with lime juice and serve hot.
For a side dish try this one:
CORN CASSEROLE
1 16 oz can whole kernel corn
1 16 oz can creamed corn
1/2 cup sugar
3/4 cup yellow corn meal
1 egg
1 small chopped onion
1 clove minced garlic
chopped jalapeno to taste
1 stick melted REAL butter
Mix it all up; pour in a casserole.
Bake for 45 minutes at 350*
