Make Homemade Carrot Cake Without Oven

Here is a simple home made carrot cake recipe you can make without using an oven. I use it to make soft and fluffy carrot cakes soft enough to be eaten by toddlers and grown ups alike. Its not easy being a mother to a stubborn toddler who often resists intake of vegetables and fruits. My kid used to dislike carrots but after tasting this cake it cannot have enough.

Ok here is the recipe:

Grate half kg fresh carrots. Mix sieved wheat flour (or maida) one and half cup with nicely beaten two eggs. Add the grated carrot. Mix throughly and add 100 gms melted butter. Add a pinch of cinnamon powder and fruit salt. Add sugar powder (half cup or as per preferred sweetness)and mix creating a homogeneous batter mixture. You can add some broken almonds, cashew nuts and raisins too.

Take a steel bowl and grease with butter. Dust the inside with dry atta. Now transfer the mixed batter to it. Place this utensil inside a pressure cooker. Now close the pressure cooker but donot put on the whistle. Cook on low heat for an hour.

As you near the hour mark, a sweet aroma of the cake will fill the room. Its time to put off the heat. Your carrot cake is ready. Enjoy your Yummy carrot cake. You can also serve the guests if any is left that is :-)
