Break out of your apple-a-day fruit. Summer is peak mango season. They’re a good source of vitamin C and contain beta carotene, which helps boost immunity and may reduce the risk of cancer.
How to make mango mousse
2 mangoes, peeled and sliced
¼ cup lime juice
½ tsp ground ginger
1envelop unflavored gelatin
3tbs sugar ½ cup low-fat sour cream
In a food processor, puree the mangoes with lime juice and ginger.

In a small bowl, sprinkle the gelatin over ¼ cup water. Let stand for 5 minutes. Mean while, in a small saucepan, combine the sugar and ¼ cup water, and bring to a boil. Stir the gelatin into the sugar mixture and cook stirring, for 1 minute.

Add sugar-gelatin mixture to mango puree and process until well combined. Add the sour cream; process briefly.

Spoon into desert bowls, cover and refrigerator for 2 hours.
