Meatloaf from Hell's Kitchen
posted June 16, 2009 - 2:48pmIf any of you are like me then you hate meatloaf. I'm talking about that brown brick of baked meat your mother tends to forget about and burns in the oven.
Well, I've got a recipe that'll change your experiences with bland, blah baked hamburger meat.
I'm into cajun style and foods that have a bit of a kick, so that you know you just ate something wonderful and delicious.
My own mother is a good cook in her own right and makes a killer lasagna, but destroys vegetables and turns potatoes into wallpaper paste.
I'm not to fond of her generic meatloaf either, so this is what I've done to it.
1. For a 1 lb. package of ground hamburger meat -80% lean is what I use.
2. 1 packet of Sazon seasoning. You can get this at any grocery store, check out the Goya section if you're having trouble finding it. It'll be in a little orange box.
3. Italian Seasoning to taste
4. Oregano to taste
5. Basil to taste
6. Salt to taste
7. Cracked Black Pepper to taste
8. Ketchup, just squirt some into the meat
9. Jack Daniels BBQ sauce, again just pour some over the meat
10. 1 egg
11. Tabasco sauce - add as much as you can handle
12. Mix together in a bowl and shape your loaf to fit your dish.
13. Cut slats across the top of the loaf about an inch deep into the meat. Approximately 6-8 cuts will be made.
14. Cut some Red, Yellow & Orange Sweet Peppers or use a stronger pepper if you desire and stick the pieces down inside the grooves you made on your meatloaf, the tips of the peppers should stick up like flames of a fire.
15. Cut Onions to cover the entire loaf, allowing some to fall around the sides of the loaf.
16. Add Montreal Steak Seasoning to the top of the loaf.
17. Additional Creole or Cajun seasonings and spices are optional.
18. Now the fun part... Pour your favorite Italian Salad Dressing over the top of the loaf allowing it to fill about 1/2 inch around it inside the pan.
19. Preheat your oven at 375 degrees and let that loaf of meat from hell bake for 30 minutes.
20. Check periodically to make sure it isn't burning, although you'll know it's done when the tips of the peppers are burnt to a crisp.
