Mom’s Potato Soup – Comfort Food

6 cups water

5 - 8 russet potatoes, peeled and large dice

3 - 5 slices bacon, finely chopped

1 small yellow onion, finely chopped

2 ribs celery finely diced

1 can whole kernel corn, well drained

1 can evaporated milk (not sweetened condensed)

Salt and pepper to taste

Fry finely chopped bacon until very done and very crisp. Do not drain the fat off. Sautee onion and celery in the bacon/bacon fat until tender. Add water. Add the potatoes and cook over medium heat until potatoes are fork tender. When potatoes are done, mash about 1/3 of them into the water so that they thicken the soup. Add the drained canned corn and the whole can of evaporated milk (this flavor really requires the canned milk, it adds richness to the soup) (you can substitute whole milk and ½ and 1/2 mix if you want but I like the canned milk best). Reduce heat and allow to simmer slowly for about 20 minutes (stirring frequently). Add salt and pepper to taste. Top with a pat of butter in the bowl if you aren’t watching your fat. If you are, then drain the fat off before adding the water.
