Peanut Butter Pancakes

2 Cups all-purpose flour
2 Tbsp sugar
1 Tbsp baking powder
1/4 tsp salt (*omit if you use salted peanuts)
2 eggs, lightly beaten
1/4 Cup creamy style peanut butter
2 Cups milk
1/2 Cup chopped peanuts*
In a large mixing bowl combine flour and other dry ingredients, stir to blend ingredients.
In a medium bowl, whisk together eggs and peanut butter until well combined, set aside.
Now gradually stir (don't beat or pancakes won't puff up) milk, 1/4 cup at a time, into dry ingredients (batter will be stiff at first, but will thin when all the milk is added).
Then stir in egg and peanut butter mixture. Stir just until combined (mixture will be a little lumpy) Gently stir in peanuts. Mixture will thicken as it stands.
Heat lightly greased griddle or heavy skillet over medium heat. You don't want it real hot, because it will burn the oil in the peanut butter and turn it black.
Pour approx. 1/4 cup of batter for each pancake, and cook on one side over medium heat until top is bubbly and edges are slightly dry looking, flip and cook on other side until golden.
Serve with your favorite jelly, or with creamy peanut butter on top. Makes approx 16 pancakes.
