Easy Italian Cooking
Easy Italian Cooking that simply tastes amazing!
I like to call this dish:
2 lbs Ditalini (or any small pasta of choice)
1 lg Yellow Onion (traditionally in my home 1 can of pearl onions)
2 lbs Pepperoni (sliced & cut into 1/4's)
1 can of Peas (fresh is better)
2 cans of Stewed Tomatoes
Salt & Pepper (to taste)
Dash of Oregano (to taste - optional)
Pinch of Basil (to taste - optional)
Instructions
Set up a large pot with water for the pasta.
Next in a large dry skillet begin to fry the pepperoni (it will generate its' own oil).
Slice the onion into slivers and add to the pepperoni.
Continue to fry until the onions are translucent and tender.
Add the stewed tomatoes (juices and all) to the skillet cover and turn heat down to a simmer. (Add desired spices & Stir occasionally)
Now start the water to prepare the Ditalini as per instructions on the package.
When pasta is tender, drain and set pot aside. (10-15min)
Open and drain peas, then add to the pasta.
Remove skillet from heat and carefully transfer contents into the pasta pot, mixing well.
Cover to keep warm and serve it up in big bowls.
Makes a whole bunch of irresistible mouth watering servings…
This dish is one of my favorites from my childhood.
It was handed down from my Grandmother to my Father to me, to YOU. I hope you enjoy it.
