Pepper Jelly
A friend of mine gave me this great pepper jelly recipe. This is a great way to preserve your peppers and make a sweet dipping sauce. This pepper jelly is great on burgers and goes great with some crackers and cheese. This recipe makes a great gift, fill a basket of fancy crackers and a jar of this, check it out.
You will need
2 med green peppers,
2 sml- med red, orange or purple peppers
½ cup red chilli pepper
1 ¼ cups of apple cider vinegar
6 cups of sugar
2 packs liquid pectin
Makes 6-7 ½ pint jars
In processor blend peppers until almost liquefied( Have some bits still) remove ½ into stainless steel pot. Add chilli pepper to processor and process the same. Add remaining pepper mix to stainless steel pot. Add in vinegar and sugar, cook over med heat stirring constantly until rolling boil. Continue to boil for 5 minutes, continuing to stir, turn heat to med-low add in two packs of liquid pectin, mixing until dissolved. Bring heat back to med cook until returned to a rolling boil let boil for 1 minute. Remove from heat and skim foam from the top, fill HOT sterilized jars, seal and process in water bath for 10 minutes add 3 minutes for every 1000 feet above sea level….
Uses… Great for crackers, toast and dipping.
Mix with cream cheese for a great cracker spread…Make sure to mix with cheese and place back in the fridge until ready to serve.
Dip chicken fingers or mix into some rice…yum-mee
**Heat jars in oven or in hot water bath before use( this will also sterilize), sterilize seals and lids in small cooking pot of boiling water, several minutes before use. Make sure all equipment is sterilized before use, helping to prevent bacteria from mixing with your food.
