Pineapple Cheese Casserole - A Special Family Dessert Recipe that Gets the Family to Eat Some Fruit
A great way to get some fruit into the most obstinant child or adult that would rather live off of meat and potatoes, this favorite of mine is extremely simple to prepare and even harder to ruin. You wouldn't naturally think of pineapple with cheese, but the combination is a welcome taste sensation, a crowd pleaser.
Preparation Time: 5 mins. or less
Preheat Oven: 350 degrees
Bake: 30 minutes
Servings: 4 to 6
What You Will Need:
Casserole/Baking dish at least 2" deep; at least 9x9 in. area
1 large can (at least 15 1/4 oz. , but no more than 20 oz.) pineapple chunks
1 to 1 1/2 cup shredded cheese (sharp cheddar is best)
one half cup sugar
2 tablespoons flour
Optional Topping:
3/4 cup graham cracker crumbs
1/4 cup melted butter
Do not grease your bakeware. First mix together the sugar and flour in your dish. add entire can of pineapple chunks (with juice) and cheese; mix by hand well.
Topping- Mix melted butter with cracker crumbs and sprinkle over top.
Bake 30 minutes at 350 degrees. Serve hot.
Notes:
- Add 1 to 1/4 cup of shaved turkey or ham to make this a main dish rather than a dessert
- When doubling this recipe, double the area of your bakeware (try a 13x9 dish), and add 7 to 12 mins. to the cooking time.
- Using a glass or ceramic baking dish makes this casserole turn out better.
