Poor Man's Pizza
posted August 18, 2006 - 10:48amThis is a quick tasty inexpensive recipe for lunch, brunch, or dinner. Serve a green vegetable or salad on the side and you have a meal.
1 loaf thinly sliced bread
1 can of condensed tomato soup
1 soup can can of water
1 tsp. dried oregano
2 large eggs beaten
1/4 tsp. garlic
powder
1 tsp. dried minced onion or less
2 cups shredded cheese
1 cup cooked hamburger or other pizza toppings
In a bowl combine the soup, water, eggs and seasonings. Grease a large glass baking dish. Cover the bottom with bread slices lying flat. Give the liquid mixture another good stir and pour half of it over the bread in the dish. Cover with half the cheese and toppings. Repeat with a second bread layer, then liquid then cheese, then toppings. Cover and refrigerate several hours or overnight.
Uncover and bake at 350F about a half hour or until puffed up and cheese is golden. Wait about 5 minutes before serving.
