The first time someone told me they were going to make me an Oatmeal Pie, I thought it sounded so gross. I was completely surprised at the flavor of this pie. If you like Pecan Pie, you will like Oatmeal Pie. Give it a try. It is very good.

Some cooks told me it is best to toast the oatmeal in the oven for a few minutes first, but watch it, so it does not burn.

There are many other recipes but this is the best so far. This is the one similiar to a Pecan Pie but without the Pecans. A lot less expensive to make.

Ingredients:

2 eggs, slightly beaten
2/3 cup melted butter
2/3 cup white corn syrup
1 tablespoon brown sugar
2/3 cup oatmeal
1 teaspoon vanilla
1 (9-inch) unbaked pie crust

Preparation:

In a medium bowl, combine eggs, butter, corn syrup, brown sugar, oatmeal, and vanilla; mix well. Pour into unbaked pie crust. Bake at 350 degrees for 45 minutes, or until firm. Serve topped with vanilla ice cream or whipped topping.
