Recipe: Pickled Ladyfinger

Ingredients:
1 kg small ladyfinger
5 hot green or red chillies
5 cloves garlic
For the syrup
1/2 cup white vinegar
1/2 cup water
1 tbs yellow mustard seeds
6 tbs salt
Method:
Wash the ladyfinger but do not puncture.
Pack in jars.
Boil together water, vinegar, salt
and seeds.
Pour over the ladyfinger.
Add garlic and pepper to the jars. Seal.
Wait for 1 month before eating.
WHY LADYFINGER IS GOOD...
It is low in sodium, and very low in saturated fat and cholesterol. It is also a good source of protein, riboflavin, niacin, iron, source of dietary fiber, vitamin A, vitamin C, vitamin K, thiamin, vitamin B6, folate, calcium,magnesium,phosphorus,potassium and manganese.
Expert says that we know it as ladyfinger, but all over the world it is called okra. Very versatile, you can use it in all kinds of food. It is a rich source of thiamine and folic acid (B complex vitamins). When cut, the sticky substance is an excellent thickening agent.
