Recipe Pumpkin Spice Snack Cake
posted September 6, 2006 - 2:08am1 pkg. (2-layer size) yellow cake mix
1 can (15 oz.) pumpkin
1 cup mayonnaise
3 eggs
1 heaping teaspoon powdered cinnamon
1/2 teaspoon powdered ginger
1/4 teaspoon powdered cloves
FROSTING
1/2 cup (1 stick) butter or margarine, softened
3-1/2 cups powdered sugar
2 Tbsp. milk
1 tsp. vanilla
BLEND cake mix, pumpkin, mayo, spices and eggs with electric mixer on medium speed until well blended. Pour into greased 15x10x1-inch baking pan.
BAKE at 350°F for 18 to 20 minutes or until knife inserted in center comes out clean. Cool completely on wire rack.
BLEND butter, powdered sugar, milk and vanilla with electric mixer on low speed until moistened. Beat on high speed until light and fluffy. Spread over cake.
