Shredded Cabbage Soup:

Why cabbage is good...

Cabbage is low in saturated fat and cholesterol and high in dietary fibre, vitamin C, vitamin K, potassium, manganese, vitamin A, thiamin, vitamin B6, calcium, iron and magnesium. The nutritional value and health benefits of cabbage make it ideal for maintaining optimum health and weight loss. Don't include too much cabbage is your diet if you're interested in gaining weight.

Recipe: Shredded Cabbage Soup

Ingredients:

2 medium onions, thinly sliced, 3 tbs butter
250 ml beef broth or vegetable broth
1 small head green cabbage, shredded
2 carrots, sliced
2 medium potatoes, peeled & cubed
1 stalk celery (including leaves), sliced
2 tomatoes, chopped
1/2 to 1 tsp dried dill
Salt to taste
Pinch of freshly ground pepper

Method:

Cook and stir onions until tender. Add broth, cabbage, carrots, potatoes, celery and tomatoes.
Add enough water to thoroughly cover all ingredients by 1 inch. Bring to a boil, then reduce heat and add seasonings.
