Spaghetti Carbonara- directly from Italy!
posted May 13, 2008 - 4:23pmYou can eat spaghetti in many ways: pasta can be very various every day. A way to cook spaghetti and spare time is “Spaghetti Carbonara’s recipe!”. It is very fast to prepare: you need about ten minutes! You have just a problem: if you are on diet, you have
to eat only this! I’ve learned it from my grandma: I don’t know exactly if that is the original recipe, but we prepare it in this way.
You need: 500 g spaghetti- 170 g pancetta- 2 tbsp olive oil- 5 eggs- 2 tbsp cooking cream- 200 g parmigiano grated- salt-pepper
Bring 5 litres water to boil in a large saucepan with an hand salt. Add the spaghetti and cook until al dente.
Meanwhile cut the pancetta into short little strips.
Add the olive oil in a heated pan and the pancetta and fry until golden, then remove from the heat and set aside.
Beat the eggs well with salt, pepper, parmigiano and, if you like, a little bit cream. Drain the spaghetti, tip into the pan with the pancetta, add the beated eggs and toss together well.
Taste for salt or pepper. Serve warm in pasta bowls.
If you like some wines, I choose for “spaghetti carbonara” a good italian wine, red, dry, like Chianti or some Negramaro wines like Primitivo, Terra, Nero.
