Starbucks Copycat Recipe - Cinnamon-Swirl Biscuits

Ingredients (for about 12 biscuits)

For the filling

- 1 cup brown sugar
- 1 tsp. round cinnamon
- 1/2 cup finely chopped walnuts
- 1/4 cup dark raisins

For the biscuits

- 2 cups all-purpose flour
- 2 tbsps. granulated sugar
- 2 tsps. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1/2 cup unsalted butter (unmelted)
- 3 tbsps. melted unsalted butter
- 2/3 cup buttermilk

Preparation

- Mix together all the ingredients for the filling and set aside.
- Sift together all-purpose flour, granulated sugar, baking powder, baking soda and salt.
- Add 1/2 cup butter and blend well with a pastry blender until the mixture turns crumbly.
- Add buttermilk and stir until the mixture become a dough.
- Place the dough on a large floured surface and knead about 10 times.
- Shape the dough into a rectangle about 12 inches long and 4 inches wide.
- Brush thoroughly with melted butter.
- Spread the filling over the dough.
- Carefully roll the dough over the filling, starting at one of the long sides of the rectangle.
- When you finish rolling, it should look like a tight cylinder.
- Cut the roll into 1-inch-thick slices.
- Put the slices in a buttered cake pan, about 1/2 inch apart.
- Bake in a preheated 425-degree oven for about 15 minutes or until the biscuits turn puffy and light brown.
