Stuffed Acorn Squash

As summer turns into fall, one of my family's favorite supper dishes is stuffed acorn squash.  This recipe, from Cooks.com, is our all time favorite.  The acorn squash is one of the tastier versions of the vegetable, with a slight nutty flavor to the pulp.  I hadn't realized this until recently, but after the squash rind is cooked it softens into a palatable skin that reminds me of eggplant skin.  The raisins, walnuts, and stuffing mix create a perfect fall flavor that is tasty at Thanksgiving, and a comfort food anytime.
