Tasty Plum Pork

Plum Pork Tenderloin

My sister Nancy says some recipes are
too hard. She rejects scooping out baked potatoes and peeling
tomatoes. (OK, I'll admit I have never peeled a tomato either.)

For this recipe, Easy is the operative word.

1/2 C plum sauce - you can find this in the ethnic foods section
of your supermarket

3 T of soy sauce (I used the lowered sodium type.)

salt and pepper

1.5 to 2 lb. boneless pork tenderloin

Preheat oven to 375

Combine plum and soy sauces with salt and pepper to taste. Mix well.
Place pork tenderloin on baking rack in baking pan or broiler pan.
Add enough water to cover the bottom of the pan without touching
the pork. Generously brush plum mixture over the pork to glaze.
Bake uncovered for 1 hour and twenty minutes or until the internal
temperature registers 165. (I had a 1.5 lb tenderloin and it was
done in 80 minutes.) Brush with plum mixture every 20 minutes
while baking. Remove from oven and slice crosswise into 1/4
inch slices.

My two guests liked it very well.
