Tetrazzini Everything Recipes

This holiday season, most of us like to find interesting recipes to revive our tired old recipes for turkey, stuffing, and vegetables. You can look in cookbooks, on TV, and on the internet for complicated recipes containing exotic ingredients to liven up your meal. In his economy, many people do not have the resources to go searching for hard to find expensive ingredients to cook like the food network personalities. An easy way to give your meals an extra kick is to fix them as Tetrazzini.

Most people have eaten Chicken Tetrazzini. A few people after Thanksgiving have created Turkey Tetrazzini. A lot of people don't know that you can fix almost everything as a Tetrazzini casserole.

You will need to start with the basic recipe. I have tried a lot of tetrazzini recipes over the years and this is the basic recipe that I have developed over the years.

Basic Tetrazzini Recipe

1 ½ cups noodles, cooked according to package (I like to use egg noodles)

Sauce:

½ stick of butter

½ cup of all purpose flour

2 cups of milk

½ cup parmesean cheese

Topping:

½ stick of butter

1 cup of plain breadcrumbs

To start, melt the butter in a saucepan. When the butter has melted, add the flour and stir until the mixture is smooth. Add the milk, and stir until the sauce is nice and thick. Add the parmesean cheese and stir until the cheese has melted in to sauce.

To make the tetrazzini, place the noodles and whatever meat or vegetables you choose into a 8 inch square baking pan. Pour the sauce over noodles and stir until they are mixed. Melt the second ½ stick of butter and mix it with the breadcrumbs. Sprinkle the breadcrumb mixure over the casserole and bake at 400 degrees for about 15 minutes.

The are many things you can include in a tetrazzini casserole. Some suggestions that I have tried include chicken, turkey, sausage (ground and cut up links work), frozen mixed vegetables, sauteed eggplant, pork, artichoke hearts, canned tuna fish, and even seafood. If you are using meat or seafood in your casserole, make sure you cook the meat before including it in this recipe.

You can dress this recipe up for company, for fix it as a rainy day comfort food. Enjoy!
