The Bachelor Chef Files, Recipe III: Avocado Burritos

Being a bachelor generally means being dirt poor and not having the money to make elaborate gourmet meals. It involves eating the cheapest priced and easiest to make food that is known to man. If it comes out of a can or a freeze, it's perfect fodder. But there is no reason why we bachelors (and bachelorettes) can't prepare meals that are inexpensive, quick and easy while also being delicious and healthy too! Today's recipe is all of those things and sure to impress anyone you make it for.

You will need these ingredients:

2-4 tortillas
1 medium-large avocado
1 diced roma tomato (or small tomato of your choosing)
shredded cheese
sour cream
salsa
optional: shredded lettuce

Place a tortilla on a plate, add cheese and salsa down the middle, and microwave for 30 seconds. Add diced tomato, 1/4 diced avocado, sour cream and lettuce if using. Press your hand down onto this mixture and tip the plate at a 45 degree angle over the sink in order to drain any excess liquid (from the salsa). Fold up and serve immediately. Continue until all ingredients are rolled up into burritos. These have to be served as soon as they are made, since the cold ingredients will turn the hot ingredients cold if left to sit. You can't microwave left overs either, so make sure to only make what you plan to eat. (Neither avocado nor lettuce tastes very good after being nuked.)

These sound yummy!! Better go get your avacados now though! California's been in a deep freeze for a week, and all the avacado and orange crops are ruined. They are about to get really expensive! Dragonfly Xomba Moderator
