Tuna Salad For Everybody
posted December 12, 2008 - 12:24amThere are many recipes for tuna salad on the web and in the books. But I have one that is always a favorite for everyone I make it for. I have served this to a group of twelve soldiers during a deployment, my family, friends, and my wife's family with nothing but accolades. It is very refreshing and light.
The first step in making this tuna salad is to collect the ingredients.
1. Canned tuna- 3- 6oz cans, in water, albacore or other
2. Eggs- 6 large
3. Dill pickles- 1/2 cup
4. Mayonnaise- 1/2 cup
5. Mustard-1/2 cup
6. Sweet Onion- 1/2 peeled onion Vidalia is best
7. Salt- to taste
8. Pepper-to taste
First you need to hard boil the eggs, for instructions on how to make the perfect hard boiled egg please see my article (http://www.xomba.com/how_cook_perfect_hard_boiled_egg). While the eggs are cooking you will need to strain the liquid from the tuna. You can use the lid and press it out or a standard "can" strainer that you can purchase at most grocery stores. Place the strained tuna into a large mixing bowl. Next dice the 1/2 cup of pickles and add to the tuna in the bowl. If you choose add onion, dice onion and add to mixing bowl. Next put the 1/2 cup of mayonnaise and 1/2 cup of mustard into the bowl. Once you have peeled the eggs, dice them using an egg slicer twice per egg, or with your knife. Mix until the ingredients are dispersed evenly throughout. You can add pepper or salt to taste, but it won't take much.
This recipe should make 6-9 sandwiches depending on your portions. If making 6 servings you will get 221 calories per serving (not counting the bread), and is packed with protein and low in carbohydrates.
Tips:
If you want a creamier salad that sticks together better, add more mayonnaise until desired thickness is attained.
If you want to make a light version with fewer calories, decrease the amount of mayonnaise (49 calories per table spoon), or you can leave it out all together. In this case you may want to add more pickles and mustard to replace the "tangy" taste of the mayonnaise. You can also substitute light mayonnaise.
If you don't like onions, simply leave them out.
