Vegetarian Food from Indonesia, Urap Urap a Spicy Vegetarian Food, Urap Urap from Indonesia food alternative for Vegetarian

Most people don't like to eat plain vegetables. I certainly wouldn't. But we need our fiber and enjoying your meal sure is more preferable. Most people in Indonesia likes to eat vegetables and the reason is because most of those veggies are not just plainly eaten.

Good news for those vegetarians out there, there is a spicy dish that consists only of vegetables. Urap urap from Indonesia is all vegetables but spicy food. Its a good food alternative for bored vegetarians. Urap urap has lots of fiber and healthy. Moreover you can experiment with different kinds of vegetables.

For this recipe I use basic vegetables:

2 bunches snake beans, trim and cut into 7cm lengths
2 bunches English spinach, trimmed and roughly chopped
You can also add carrots (steamed or boiled)

For the coconut spices:
2 cloves garlic, peeled
4 small red chillies
1cm piece fresh ginger, peeled
1 tsp salt
1/4 tsp belacan (prawn paste), optional
1/2 tsp sugar
3 tbsp desiccated coconut
1 tsp water
1 bunch lemon basil, leaves picked

Boiled the snake beans for 2 minutes and the spinach for 30 seconds. Drain and set aside.

Grind the garlic, chillies, ginger, salt, belacan and sugar to a paste.

Mix the coconut, water and paste evenly and put it in a heatproof bowl. Cover the bowl with plastic wrap and then steam it in microwave for 30 seconds.

Stir the spiced coconut through the blanched vegetables and sprinkle with the lemon basil. Serve at room temperature.

If you want to make it last until the night or the next day, do not stir all of the vegetables and spiced coconut all at once. Just enough for your meal and then store some in the fridge. To heat them up, steam them in the microwave for 15 seconds.
