Winter pea soup recipe: Tons of nutrients and super low in calories, with a vegetarian version

This simple soup is super low in calories, this recipe is going to make 3 big servings, so you can have left overs for lunch the next day.

Peas are loaded with: Vitamin B1, B3, B6, Folate, and Vitamin C. They contain good amounts of Iron, magnesium, phosphorus and Zinc, and modest amounts of Vitamin A, B2, and Calcium.

Why eat peas?
At just over 100 calories per cup, and being high in protein, they become a super food (in my opinion), particularly to anybody on a diet or who is looking for a good protein source that is cholesterol free.

It’s high in vitamins B2, B3 and B6. They also contain a modest amount of a number of other nutrients including copper iron and zinc.

This soup is super low in calories and super high in nutrition.

Ingredients:

  • 1 cup of peas (110 calories)
  • Half a cup of lettuce, lightly packed (about 4 calories)
  • 1 small onion – about 30 calories
  • 2 teaspoons of mint sauce – or - 2 teaspoons of fresh chopped mint + 1 tea spoon of sugar (abt 15 calories)
  • 1 and a half cups of a good light stock – as little as about 10 calories
  • Half a cup of milk – fat free 85 calories

Method:
1. Add everything, except the milk to a pan. Bring it up to a simmer and simmer for just 5-10 minutes.

2. Take off the heat, add the milk and then blend with a hand blender.

3. Add more or less stock depending on how thick you like your pea soup.

Stock options:

  • Ask butcher for a “Ham Hock” and simmer that for an hour or so and use the stock that comes off.
  • A stock cube is good enough if you are having a lazy day[/b]
  • Store bought sodium reduced stock: Chicken or vegetable.
